Homemade Apple pie the Kyrö Way
Apples, apples, apples and apples. We Finns sure love our apple trees, but sometimes the trees tend to produce a lot more apples than we are able to use. There is only so much apple juice or apple jam you can store or give away to your neighbours, friends and family.
What you can always count on is, of course, an excellent apple pie. This coffee table stable comes in all shapes and sizes, and what your grandma used to bake is probably very different from my mumma`s version of the traditional pie. So here is our delicious recipe for an unforgettable apple pie, with a little help from our friends at Pärlans Konfektyr.
Caramel glazed apple pie recipe
250 g butter
250 g icing sugar
Dash of cardamom
5 eggs
250 g almond flour
100 g cornstarch or light gluten free flour mix
3 autumn apples
150 g Kyrö x Pärlans caramel sauce
Do this
Set the oven for 200 degrees Celsius. Soften the butter in room temperature. Whisk the softened butter and the icing sugar to soft foam and season with cardamom. Mix the flours. Whisk the eggs and parts of the flour mix in turns to the butter-sugar foam. After the whisking is done, slice the apples. Butter the oven pie casserole and pour the dough in it. Be careful to set the apple slices and the caramel sauce on top of the dough so that it doesn`t fall flat. Bake at 200 degrees for 25 minutes. Take the pie out of the oven and let it cool down for a while. After the pie has cooled down enough, spread the caramel sauce on top of it. Enjoy with some whipped cream and/or vanilla ice cream. Be ready to cut another piece when you're done with the first one.
